Belgian gastronomy: Nature Chic is a culinary experience in the heart of nature.
Born from a friendly encounter between two lovers of gastronomy. John Paquot, Chef Caterer, owner of La Ferme d’Odenge, and Alain Bianchin Owner and Michelin-starred Chef have created a timeless space which they baptized ‘Nature Chic’.
This exceptional dining journey begins at La Ferme d’Odenge, a bucolic place by the riverside, beneath the shade of the trees and a stylish bivouac tent. The table had been set with great care, adorned with fabrics, silverware and crystal. Candles, dim lights and a burning brazier that illuminates nature in the distance – we were simply transported for the evening. Plaids and table heating are available for optimal comfort.
The adventure began in the middle of the vegetable garden, where we shared an aperitif: champagne and seasonal cocktail (tip: taste the gin) and tastings of the Brigitin workshop’s latest creations with vegetables from the garden.
On the menu, seasonal and local products, top-notch cuisine that will delight the taste buds with its combinations of flavours: tartars with oyster, veal and caviar, foie gras mousse and parmesan, a gazpacho and its chicken chips, grilled tuna; the roasted apricot dessert and its almond milk ice cream is a pure delight! To accompany, the wines are also carefully selected by André Poës, Master sommelier in wine and spirits. Among other things, we were able to discover organic biodynamic wines. To end the dinner, coffee and sweets from the Brigitin workshop. Note that the menu changes every two weeks.
A magnificent evening that said a gentle farewell to the summer. You must try it!
